The process of cooking food in a convection oven versus a conventional is different primarily in how each method circulates air and distributes heat. We cover these differences in more detail below. Both types of ovens use a heating element that increases the cooking temperature to a certain degree in order to cook foods. Some of the differences between conventional and convection ovens include:
Heating Element
The heating element on a convection often cooks food at a single established temperature, and it also has a fan. On the other hand, a conventional oven features a fixed heating source that allows you to raise or lower the cooking temperature.
Energy Efficiency
The constant flow of hot air in a convection oven allows it to cook food about 25 percent faster than a conventional oven. In addition, it takes longer to preheat a conventional oven.
Heat Distribution
The fan that distributes hot air in a convection oven cooks food more evenly than in a conventional oven. The fan circulates the same amount of hot air to every part of the pan. With convection ovens, you won’t have the problem of food cooking unevenly. The only way to achieve a similar or same level of uniform cooking in a conventional oven is to rotate the pan a few times during the cooking process.
Oven Capacity
The airflow in a convection oven allows you to put food items on each oven rack. The circulated hot air will ensure everything is cooked evenly without any need to manually rotate the food items. On the other hand, to achieve the same effect in a traditional oven, you will need to switch the cooking pans one or more times during the cooking process – otherwise, more heat will flow to the bottom pan than the top pan.
Moisture
A convection oven produces a drier atmosphere that creates crispy coatings on foods. You can achieve this effect of browning in a conventional oven by adding butter or olive oil and manually turning the pan a few times during cooking.
